Blueberry Pie Pops

Cool off this summer with some refreshing and gorgeous, creamy Blueberry Pie Popsicles! All the yumminess of a piece of pie, but without all the work and guilt!
We’ve been having a heat wave here!  The kids can’t keep from romping and playing outside, but you can bet they come indoors often for a reprieve from the soaring temps.  This is when they raid the freezer in search of something cool and refreshing.
So the other day before they headed out, they helped me throw together these delectable Blueberry Pie Pops.  By the time the kids were sweaty and tired and came in, the popsicles were frozen and ready to eat!
My kids and I love to keep busy during the long summer days with constructive projects, including spending lots of time in the kitchen making tasty snacks!  I’ve been trying to help my oldest daughter to be more hands-on with the food prep so she can learn those valuable skills and also hopefully enjoy making good things to eat, just like her mama.  🙂
I’m always looking for easy recipes to give her experience in the kitchen.  My other kids also always come sit on the counter to help measure and stir.  I cherish the memories we make while working together there.
These pie pops are not only simple to put together, but also completely scrumptious!  Summer in a handheld snack.
We had already hit Walmart and stocked up on Yoplait® Yogurt!  I’m always like a kid in a candy store in this section.  So many delicious flavors!  Oh, the possibilities!
For today’s recipe you’ll need two containers of Yoplait® Blueberry Patch Yogurt and two containers of Yoplait® French Vanilla Yogurt.  Then, grab some graham crackers and fresh blueberries, and you’re good to go!
{BLUEBERRY PIE POPS}
Makes six mini pops
2 containers (6 oz. each) Yoplait® Blueberry Patch Yogurt
2 containers (6 oz. each) Yoplait® French Vanilla Yogurt
For the “crust”:
4 graham crackers, crushed
Blueberry Syrup:
3/4 cup fresh blueberries
1/2 cup water
4 tsp. sugar
Mini plastic cups to use as popsicle forms and popsicle sticks
Place water, fresh blueberries, and sugar in a small pan over high heat and stir.  Allow mixture to come to a boil, then turn the heat to low and allow mixture to simmer, uncovered, for 3 minutes until the liquid turns nice and purple.  Sift out berries and discard, leaving only the syrup.  Crush your graham crackers.  Stir in 2 tablespoons blueberry syrup.  Place French Vanilla Yogurt in a bowl and swirl in 1 1/2 tablespoons blueberry syrup.
Place a few spoonfuls of Blueberry Patch Yogurt in the bottoms of the cups.  Layer next with a few spoonfuls of French Vanilla Yogurt, followed by another layer of Blueberry Patch Yogurt.  Poke popsicle sticks in and then top with graham cracker pieces.  Place in the freezer until completely frozen through (about 4 hours).  Remove popsicles by running cool water over the outside of the cups while gently pulling on the sticks, until they come free.
These are the perfect size for kiddos!  Mine gobbled them right up!  I am a total pie lover, so these really hit the spot for me too!  The best part is that you can make lots more variations of this by simply swapping in different flavors of Yoplait® Yogurt!
