Today I get to brag about these amazing Circus Animal Sugar Cookies! I hope you bake up a batch soon!
I have fond memories from my childhood of snacking on the cute sprinkled pink-and-white-frosted animal crackers. They are just SO good! The other day when I was out grocery shopping, I noticed them on an aisle end cap (genius marketing placement for suckers like me). My mouth watered just looking at the packaging, so I knew I needed to bring some home.
I’m happy to report that they are still 100% as tasty as I remember them being! Don’t you love it when that happens?
Now I’ve gotten my kids hooked on them. Ha! One of the joys of being a parent…sharing my love of sweets with my children. Although I’m ashamed to admit that they are much better at controlling their sugar intake than I am. Maybe one of these days I’ll conquer my addiction. But when there are Circus Animal Sugar Cookies around, I don’t want to.
There’s always tomorrow, am I right? And maybe by then the supply of tasty cookie temptations will be gone. But alas, my cookie cravings are never satisfied.
When dessert tastes as good as this, I will always want more. With a non-traditional sugar cookie base (I say non-traditional because you don’t have to chill the dough and it’s thicker than your typical sugar cookie dough), chunks of pretty pink and white sprinkled Circus Animal Cookies, what’s not to absolutely adore and devour?
The almond flavoring and cream of tartar in the dough really make these one-of-a-kind delicious! Drizzled generously with white chocolate, they are nothing short of irresistible! My husband actually detests sugar cookies, but he gave these two thumbs way up!
{CIRCUS ANIMAL SUGAR COOKIES}
1 c. sugar
1 c. shortening
1 egg
3/4 tsp. almond flavoring
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1/2 tsp. salt
1 c. (or a little more if you’d like) Circus Animal Cookies, coarsely chopped
1 c. white chocolate chips for drizzling
Cream together sugar and shortening. Add egg and almond flavoring and mix once again. In a separate bowl, stir together flour, baking soda, cream of tartar and salt. Add to wet mixture and mix until combined. Stir in Circus Animal Cookies. No need to chill the dough! Form into round balls, put on cookie sheet, then flatten with a fork while using your other hand to keep the dough together. Sprinkle sugar over the tops of them and bake at 350 for exactly 8 minutes. Don’t overbake! Let sit on cookie sheet for a few minutes, then remove to a cooling rack. When cool, drizzle with melted white chocolate chips. Feel free to double the recipe for even more goodness!
