I’m a total homemade breakfast person. Apparently I’ve passed that trait onto my children, because they literally beg for pancakes every day of the week. But, since we’re typically flying by the seat of our pants to get three kids ready and to school before 8 a.m., we have to take a few shortcuts where possible. That being said, I like to make pancake batter the evening before and then just quickly cook them up the next morning. With that little bit of thinking ahead, we are literally only a few minutes away from a hot, satisfying breakfast before heading out the door.
The “school morning chaos” may cause me to forget to fill out that field trip permission slip or to have my kids wear tennis shoes on P.E day, but there’s one thing that I’m pretty good about staying on top of, and that’s taking my daily vitamins. Because it’s pretty important that I get my nutrients so I can stay on top of the “mom game”. And I have to be at my best when all it seems to be is “go, go, go!”.

Being the pancake lovers that we are at our house, we have a few go-to versions that we use to switch things up and keep everything interesting. This is one of those stalwart recipes that is in our rotation and always turns out deliciously! The little strawberry treasures nestled inside are enough to make us do jumping jacks! Yes, I’m admitting that it doesn’t take much to make our day amazing! 🙂

Fluffy Strawberry Pancakes
Ingredients
- 3/4 c. whole wheat flour
- 3/4 c. all-purpose flour
- 1 Tbsp. baking powder
- 3 Tbsp. granulated sugar
- 3/4 tsp. salt
- 1 1/4 c. milk
- 3 Tbsp. melted butter
- 2 large eggs
- 1 tsp. vanilla
- 1 c. fresh strawberries diced small
Instructions
- Heat a griddle over the stovetop on medium-low heat. In a large bowl, stir together both flours, baking powder, sugar, and salt. Add milk, melted butter, eggs and vanilla and whisk together well so no lumps remain. Stir in diced strawberries.
- Grease the heated griddle, if necessary, and pour batter in manageable rounds, flipping the pancakes when they start to bubble on top, allowing them to completely cook through so they are a nice golden brown on the outside and aren't gooey inside. Serve warm, topped with additional sliced strawberries and syrup, if desired.
These Fluffy Strawberry Pancakes are like sunshine on a cloudy day! They are a great reason to get out of bed when that alarm clock goes off. 🙂 It’s hard not to smile when you get to start your day this way!
