Spring time always has me craving all things lemon in my desserts. Are you the same?
I love a good lemon bar, but I’m also crazy for the combination of lemon and blueberry. So I put the two together in this incredible confection that will leave you in complete awe.
Let’s not even start on that crumb topping and sweet lemon drizzle! These bars are something else!
If you follow me on Instagram, you may have seen my story the other day about the exciting goody box I received from Krusteaz. It was cause for a happy dance! I had a tough time deciding which mix to use first!
But since the warmer weather is upon us and thus it’s citrus season, I knew I needed to bake up something lemon-y! I love using mixes in my baking because it eliminates a great deal of work and it leaves endless options open for switching things up with add-ins and embellishments, like in today’s recipe.
With a Krusteaz Meyer Lemon Bar baking mix, some blueberries, and a few other ingredients, these bars came together so easily and I didn’t even have to break a sweat! These bars deserve their own theme song. Yes, they are totally noteworthy and drool-worthy.
Maybe baking these will convince Mother Nature that it really is spring time outside. We had another snow storm on April 1st. It was a cruel April Fool’s prank. I certainly wasn’t laughing. But, I had some of these leftover bars to console me, so I was perfectly fine.
The kids were making snow men outside, having a great time, while I was wondering when I could put away the winter clothes. I’m glad I didn’t jump the gun on that one. I’m so ready for shorts and sandal weather!
But, even if the skies are dreary outside, all is sunshine and butterflies inside as long as these Lemon Blueberry Bars are around.
I made the components of the mix according to package directions, then baked the crust, poured the lemon filling mixture over the top and sprinkled a generous amount of blueberries over it. Next, I added my own special touch-a crumb topping. After baking it to perfection, I drizzled on the most amazing two-ingredient lemon glaze! You can leave it off, but to me it’s the cherry on top.
Lemon Blueberry Crumb Bars
Ingredients
- 1 box Krusteaz Meyer Lemon Bars Supreme Mix plus ingredients called for on the package
- 1 c. blueberries
- Crumb Topping:
- 5 Tbsp. butter softened
- 1/2 c. brown sugar
- 3/4 c. flour
- Lemon Drizzle:
- 1 c. powdered sugar
- 2 Tbsp. fresh-squeezed lemon juice
Instructions
- For the bars, preheat oven to 350 degrees Fahrenheit and follow the directions on the package for making the filling and crust. Bake crust according to package directions. While it's baking, prepare the crumb topping by pressing and mixing all ingredients together with your hands until it forms coarse crumbs. Pour the lemon filling over the hot crust, sprinkle evenly with blueberries, then sprinkle on the crumb topping. Bake for approximately 26-30 minutes, or just until the edges begin to brown. Remove from oven, allow to cool to room temperature, then chill for 2 hours in the refrigerator to make slicing easier. Make the glaze by whisking together powdered sugar and lemon juice. Drizzle over bars. Slice and serve. Store in the refrigerator.
These dreamy bars just scream spring and summertime. Is it bad that I counted them as breakfast one morning? If that’s wrong, I don’t want to be right!
