Surprise Santa with an extra special treat on the night of Christmas Eve with this festive plateful of peanut butter cream cheese NILLA Wafer Sandwich Cookies and a cup of comforting hot chocolate! After all, he deserves it!
My kids and I have a fun tradition on the day of Christmas Eve of making special cookies for Santa Claus. Then, before the kids head to bed and start dreaming of sugar plum fairies, they lovingly fill a plate with the cookies and set out some milk. Sometimes they choose hot cocoa if they’re really wanting to score bonus points with the jolly man. 🙂
They like to leave extra goodies for the reindeer and some for Santa to take back to his hard-working elves.
I already know what cookies we’ll be serving Santa this Christmas Eve night! These chocolate-dipped NILLA Wafer Sandwich Cookies are about the easiest things ever to put together, require no baking, and are so stinking cute! Because everything tastes better in mini form. 🙂
I ran to Walmart and snagged some NILLA Wafers, Peter Pan Simply Ground, and of course some Swiss Miss with Marshmallows and Milk Chocolate. These are the star players in this exquisite and oh-so-memorable dessert for Santa.

We like to show Santa just how much we care by going the extra mile (you might say we’re suck-ups), so we not only prepared him a nice steaming cup of Swiss Miss® hot cocoa with marshmallows, but we also set out some homemade peppermint whipped cream for garnish, if he so desires. 🙂
We love Swiss Miss for its rich chocolatey taste and because it’s made with real milk! Only the best for Santa!
To make the peppermint whipped cream I just whipped 1/4 c. heavy cream with 1/8 tsp. peppermint extract and 1 Tbsp. powdered sugar until soft peaks formed.
And now here’s what you’ll need to create this simple cookies and hot cocoa bar for Santa:
Call the kids over and let them join in on the fun! This is a perfect way to get them excited and into the holiday spirit.
You’ll start by making the peanut butter cheesecake filling mixture with a little Peter Pan Simply Ground™ (it’s the perfect blend of creamy and crunchy!), some softened cream cheese, a touch of vanilla extract, and just enough powdered sugar. Next, have the kids spread some of the tasty mixture onto a NILLA Wafer, then sandwich it with another NILLA Wafer. Melt some chocolate and dip about half of each sandwich cookie, then immediately sprinkle with festive yummies!
Now you have to taste test one or a few before you serve them to Santa to make sure they’re not poisonous. 🙂
NILLA Wafer Sandwich Cookies
Ingredients
- 4 oz. cream cheese softened
- 2 Tbsp. Peter Pan Simply Ground™ Peanut Butter
- 1/4 tsp. vanilla extract
- 1/3 c. powdered sugar
- NILLA Wafers
- 1/2 cup chocolate chips melted, for dipping
- Sprinkles
Instructions
- In the bowl of an electric mixer, blend together cream cheese, peanut butter, vanilla and powdered sugar until fluffy and creamy. Spread mixture on a NILLA Wafer, then sandwich with another NILLA Wafer. Repeat until mixture is gone. Dip each sandwich cookie halfway into the melted chocolate and immediately add sprinkles. Allow the chocolate to set completely. These are best when fresh, so make them just before you're ready to serve!
Be sure to set out plenty of cookies and don’t forget the hot cocoa and peppermint whipped cream! I’m sure the big guy works up quite an appetite and thirst while making his rounds.
We set the goodies out on our special Santa plate and served the cocoa up in our special Santa mug. Won’t he be pleased at this sight?!
