Easter is coming! Don’t let it pass without making these delightful Cadbury Mini Egg Brownies!
I’ve been known to rave about boxed brownies. They really are delicious. But I have a few brownie recipes on the site that are, I daresay, even better than boxed brownies! And probably not too much harder to make, too! This is one of said brownie recipes.
I’d say it’s a perfect cross between my Copycat Cosmic Brownies and these Frosted Brownies. These are fudgey and so chocolatey! Every Easter celebration calls for some Cadbury Mini Egg Brownies!
When those happy little chocolate eggs hit the store shelves, I can’t help but buy package after package. After all, they only come ’round once a year! I get so excited to make desserts with them. They’re so colorful and pretty! And talk about tasty too!
These brownies will knock your socks off! The fluffy vanilla buttercream frosting and crushed Cadbury Mini Eggs are the cherries on top. I know you’re going to love these!
Our Easter feast typically consists of baked ham and potatoes with homemade rolls and salad. Dessert is a bit of a wildcard, but we typically choose between this incredible Carrot Cake and these Cadbury Mini Egg Cookies, these Carrot Cake Cookies and these Cookie Magic Bars.
I’m not going to lie, sometimes we make two desserts on Easter, because why force ourselves to settle on just one? 🙂
Easter is such a beautiful time of year. Nature starts to come alive again after a long winter. I love the pastel-colored flowers, the green grass and blue skies that signify spring!

Cadbury Mini Egg Brownies
Ingredients
- 1 c. butter melted
- 1/2 c. semi-sweet chocolate chips
- 1 1/4 c. brown sugar packed
- 1/4 c. granulated sugar
- 2 tsp. vanilla extract
- 2 large eggs
- 1 3/4 c. all-purpose flour
- 1/2 c. baking cocoa
- 1 tsp. baking powder
- 3/4 tsp. salt
- 2 tsp. corn starch
- Frosting:
- 1/2 c. butter softened
- 3 1/2 c. powdered sugar
- 1 tsp. vanilla extract
- Just enough milk for thinning add it 1 Tbsp. at a time, mixing in between
- 1 c. crushed Cadbury Mini Eggs I put my candy eggs in a zip top plastic bag and tapped a rolling pin on them to coarsely crush them
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9"x13" baking pan with parchment paper so it hangs over the sides. Or spray the pan with nonstick baking spray.
- Melt the butter with the chocolate chips in a microwave-safe bowl in the microwave in 30 second increments, stirring in between. Stir until smooth.
- In the bowl of an electric mixer, cream together the melted butter/chocolate chip mixture, brown sugar, granulated sugar, vanilla and eggs.
- In a separate bowl, whisk together flour, baking cocoa, baking powder, salt and cornstarch.
- Add flour mixture to wet mixture and mix just until incorporated, scraping down the sides with a spatula in between. Batter will be fudgy and thick.
- Spread batter evenly into prepared pan. Bake for about 15 to 16 minutes, or just until set. Don't over bake or they'll be dry!
- Let the brownies cool completely in the pan on a cooling rack. Then, use the parchment paper to carefully lift them from the pan.
- After the brownies are completely cool, make the frosting by creaming together softened butter, powdered sugar, vanilla, and just enough milk for thinning (add it 1 Tbsp at a time) in the bowl of an electric mixer. Cream it for about 4-5 minutes until it's nice and fluffy, creamy and spreadable. Frost the cooled brownies.
- Sprinkle with crushed Cadbury Mini Eggs and enjoy!
I hope you get to enjoy these Cadbury Mini Egg Brownies at least once before Easter comes and goes. But you can make them, even when it’s not Easter time! Simply sub out the Cadbury Mini Eggs for sprinkles or other chocolate candies.
