I may say this every time I share a cookie recipe with you, but these are probably my new favorite cookies ever! Right up there with these Everything But the Kitchen Sink Cookies and these Snickerdoodles. I’m a sucker for a good, soft chocolate chip cookie! These take it to a whole new level of deliciousness with add-ins. I typically don’t ever get to have nuts in my cookies because my kids turn up their noses, but this time I dared to do it. 🙂
And, guess what? They did not complain one bit! They were so distracted by the melty chocolate and soft caramel bits nestled inside the incredible cookie that they didn’t seem to notice.
We’re on the final countdown until school lets out for the summer! My kids are chomping at the bit. We have lots of fun plans for the coming warm months and they are burning out with book work. So one thing that I love to do for them is to have warm cookies waiting as a surprise when they come through the door after a long day to sweeten the deal.
They beg for chocolate chip cookies nonstop! And since I’m always craving them too, I’m never sad about having to whip up a batch! I really enjoy coming up with new recipes, and since I’ve made so many chocolate chip cookies in my life, it’s not typically too challenging to throw a little of this and a little of that together to make the perfect cookie ever time! I admit that I typically don’t even look at a recipe card anymore. I like to make it up as I go! These might be my best concoction yet! I think you’re going to love them!
We just received an email from our school district saying that they are proposing a bill to lengthen the kids’ school year by 12 days. Talk about kids’ worst nightmare! I’m pretty put off by it too. If it happens, it would most likely take away from their summer break, which we feel is already too short. I love having them home for as long as possible to party and have fun in the sun together. So we are crossing our fingers that it doesn’t go through and taking every measure possible to let our voices be heard. We are a very academically-focused family but we also believe that kids should have lots of time to play!
One thing that seems to make everything better when we’re anxiously awaiting a big decision like this, that is out of our hands, is a few chocolate chip cookies! Caramel Pecan Chocolate Chip Cookies, that is!
Caramel Pecan Chocolate Chip Cookies
Ingredients
- 1 c. butter softened
- 1 c. brown sugar packed
- 1/2 c. granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 2 3/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. corn starch
- 1/2 tsp. salt
- 1 1/4 c. chocolate chips we like dark chocolate chips
- 3/4 c. caramel bits the little soft caramel balls
- 1 c. chopped pecans
Instructions
- Preheat the oven to 350 degrees Fahrenheit and lightly grease cookie sheets or line them with nonstick baking mats.
- In the bowl of an electric mixer, cream together softened butter, brown sugar, granulated sugar, eggs and vanilla. Cream it well, mixing at a high speed, and scraping down the sides as you go.
- In a separate bowl, stir together flour, baking soda, corn starch and salt. Add it to the wet mixture and mix until incorporated. Stir in chocolate chips, caramel bits and chopped pecans.
- Scoop or form dough into rounded 1 1/2" balls and place at least 2" apart on the cookie sheets. Bake for 8-9 minutes. Allow them to cool for a few minutes on the cookie sheets before carefully removing them to a cooling rack to cool completely. Store at room temperature.
