A few weeks ago when I was in Utah, my mom and I made this scrumptious Chinese Chicken salad, which we took to our family reunion potluck one night. My dad had to drag us away from it after we put it together, because our inexorable snacking was about to make us late for the party. We almost literally took the bowl home clean. I’m not kidding when I say there were maybe two carrot shreds remaining. 🙂
The flavor contained in this one bowl is incredible and the Ramen noodles and slivered almonds give it a fun crunchy texture. I will definitely be making this when I have a gathering of my own to attend, which I hope is sooner rather than later. 🙂
{CHINESE CHICKEN SALAD}
Salad Base:
1 head shredded cabbage or 2 (12 oz.) bags coleslaw
6-8 chopped green onions
1 cup slivered almonds
3 T. sesame seeds
3/4 c. chicken, cooked and cubed
4 pkgs. Top Ramen, uncooked and broken up
Sauce:
3/4 c. oil
6 T. soy sauce
7 T. vinegar
4 T. sugar
1 t. salt
1/4 t. pepper
4 seasoning packets of chicken-flavored Top Ramen
Stir all sauce ingredients together and chill. In a large bowl, add shredded cabbage or coleslaw, green onions, slivered almonds and sesame seeds. Add 3/4 c. chicken, cooked and cubed, to cabbage mixture. Just before serving, add 4 packages uncooked Top Ramen noodles, broken up. Pour sauce over and toss lightly. Serve immediately.
