I’m obsessed with skillet meals. Especially this past year, as we’ve been doing distance learning, there’s not much time to plan dinner or to cook. So easy meals, it is! Bonus if I don’t have to spend an hour cleaning up afterwards!
The sun-dried tomatoes combined with penne, diced chicken, cream cheese, heavy cream and parmesan cheese come together to create a phenomenal experience for the taste buds! My family couldn’t get enough of this!

I’m a total pasta lover through and through. This meal comes together quickly and tastes way better than boxed mac and cheese. In fact, it tastes restaurant worthy! My husband and I rarely go out for Italian food because we feel like we can make it just as good or even better in our own kitchen, and for a fraction of the price!
Creamy Tuscan Chicken Pasta Skillet Meal
Ingredients
- 1 Tbsp. olive oil
- 1 lb. boneless skinless chicken breast or chicken breast tenderloins (diced into bite-sized pieces)
- salt and pepper to taste
- 2 tsp. minced garlic
- 1 Tbsp. Italian seasoning
- 4 oz. sun-dried tomatoes in oil drained and finely diced
- 10 oz. penne pasta uncooked
- 3 c. chicken broth
- 1/2 c. heavy cream
- 4 oz. cream cheese softened
- 1/2 c. shredded parmesan cheese
- 2 c. chopped baby spinach
Instructions
- In a large skillet over the stove top on medium-high heat, add olive oil and let it heat up for a little bit. Then add chicken breast pieces. Salt and pepper the chicken. Add minced garlic, Italian seasoning and diced sun-dried tomatoes. Stir while cooking, until the chicken is completely cooked through.
- Add penne and chicken broth and allow it to come to a boil. Reduce the heat to medium-low, push the pasta under the liquid, cover, and allow it to simmer until the pasta is tender and the liquid is absorbed. Stir frequently, continuing to push the pasta under the liquid before replacing the lid.
- Keep it on a very low heat while you add heavy cream, softened cream cheese and shredded parmesan cheese and stir constantly until the cheeses melt and everything gets incorporated. Remove it from the heat, quickly stir in the chopped baby spinach until it wilts, salt and pepper (only if needed), then serve immediately.
