This Ham Potato and Broccoli Cheddar Soup is perfect for a cold evening! It’s comforting, satisfying, and full of delightful flavor!
I love a good Broccoli Cheddar Soup, don’t you? But I was thinking that it might be lacking one thing…ham! To make this soup more filling and more flavorful, I added diced ham. The sage, rosemary, thyme and oregano work perfectly together to create a wonderful experience for the taste buds!
I know you’re going to enjoy this creamy, delicious soup! I could eat soup every night of the week in the winter time. The evenings are dark and frigid. All I want to do is put on my slippers, sweater, and make hot soup and bread for dinner. It’s a very good thing that I have a plethora of tasty soup recipes to choose from, because soup is on the menu often this time of year.
I love to gather around the table with my family and enjoy a hearty bowl of goodness while the frigid wind’s howling outside. I have to admit that I’m sad that we haven’t had more snow this winter. It’s been very dry. Though I don’t love the snow to be around all the time, I look forward to a handful of good snowstorms. My kids do too. Especially the kind that give them a day off school. 🙂 We even bought them new snow boots, but they haven’t had a use for them.
But, that’s ok. Soup weather is soup weather. As long as the temps are low, I’ll be enjoying this Ham Potato and Broccoli Soup on the regular. Give me all the comfort food! Yellow potatoes are my favorite. If you can’t find yellow, I’d recommend red potatoes. Both have more flavor than your brown potato. Potatoes make a difference in the overall outcome of this soup, since they are a key ingredient.
Do you menu plan each week? I love to be organized with my meal schedule. Every Sunday I sit down and decide what we’ll eat each evening. I typically cook at least 5 nights per week. I make my grocery list at the same time. It’s such a great way to keep to a food budget and have a plan in place, so evenings are less crazy. I grocery shop on Monday. Meal planning is so great, because when 4:00 pm rolls around, I already know what we are having for dinner. And when the kids start asking after breakfast, what we’re having for dinner, I pull up my schedule and let them know. 🙂

Ham Potato and Broccoli Cheddar Soup
Ingredients
- 1 Tbsp. olive oil
- 2 tsp. minced garlic
- 2 c. diced ham pieces
- 5 c. chicken broth
- 3 medium potatoes diced into 1/2" pieces
- 1 large broccoli floret chopped into bite-sized pieces
- 1 c. heavy cream
- 1/4 c. flour
- 2 c. grated cheddar cheese
- 1/2 tsp. rosemary
- 1 tsp. oregano
- 1/4 tsp. sage
- 1/4 tsp. thyme
- 1/4 tsp. black pepper
- salt to taste
Instructions
- In a large soup pot over the stove top on medium-high heat, add olive oil and minced garlic. Add diced ham and fry, while stirring, until ham starts to brown a little.
- Add chicken broth, potatoes, and broccoli and allow it to come to a boil.
- Cover the pot and allow it to simmer until the potatoes are tender. Stir occasionally.
- Whisk together heavy cream and flour in a bowl.
- Over low heat, once the potatoes are tender, slowly stir in the heavy cream mixture. Add the cheddar cheese and stir until melted.
- Stir soup over low heat until it simmers and thickens. This won't take long.
- Add rosemary, oregano, sage, thyme, black pepper and salt (as needed) to taste. Stir well and serve.
