These green Pistachio Cake Mix Cookies are a fun way to celebrate St. Patrick’s Day or Christmas! The chocolate chunks take the yummy factor up ten notches!
St. Patrick’s Day is not far away! Growing up, my mom would always make green desserts like these St. Patrick’s Day Cupcakes to make the day extra special for us kids.
Now, I like to do the same for my kids. I’m like Sam I Am early in the book in that I do not like green eggs and ham, but I definitely enjoy green treats! The kids get so excited to set up leprechaun traps the night before March 17th to see if they can catch the tricky little guy. We haven’t snagged him yet, but he always leaves a messy trail of footprints and green magic dust where he’s been. Last year he even left a treasure hunt and gold chocolates as a consolation prize.
But, whether we catch him or not this time around, we’ll be perfectly happy, because we’ll be enjoying these Pistachio Cake Mix Cookies! I like to fill the cookie jar with them early in the week and send one in the kids’ lunch every day.
They begin with a white cake mix, with just a few add-ins, so they come together so quickly! If you need a festive, delicious dessert in a snap, this is it!
Pistachio and chocolate chunks were meant to coexist! I always keep cake mixes stocked in my pantry because there are so many ways to dress up or switch up a cake mix! Cookies are a great way to do just that! These Cherry Chocolate Cake Mix Cookies from a few years back are some of my favorite of all time!
The pistachio pudding mix in the cookies gives them a nice green hue, but if you’re going for a more vibrant color, feel free to add green food coloring, like I did.
I chose not to add chopped pistachios, just because my kids are finicky about nuts, but feel free to throw some in for an extra scrumptious cookie!

Pistachio Cake Mix Cookies
Ingredients
- 1 white cake mix 15. 25. oz. I used Duncan Hines
- 2 large eggs
- 1/4 c. butter melted
- 1 tsp. vanilla extract
- 1 pkg 3.4 oz. pistachio instant pudding and pie filling (dry)
- 3/4 c. chopped chocolate chunks
- 2-4 drops green food coloring optional
Instructions
- Preheat oven to 350 degrees Fahrenheit. In the bowl of an electric mixer, add cake mix, eggs, melted butter, vanilla, and pudding mix (and food coloring, if desired). Mix until combined, then stir in chocolate chunks.
- Drop spoonfuls of batter on greased or non-stick baking mat-lined cookie sheets (you want it to be somewhere between 1 and 2 Tablespoons each). Space them about 2" apart.
- Bake for approximately 8-10 minutes, or just until done, but not overly brown. Let sit on cookie sheet for a few minutes before carefully removing to a cooling rack to cool completely.
