Throw this easy Slow Cooker Cheesy Scalloped Potatoes and Ham in the crockpot in the morning and dinner is done! It’s a warm, comfort food meal that’ll have everyone smiling!
This is my mom’s amazing recipe that she made all the time. I love it because it feeds a crowd and is an all-in-one meal that’s ready without a fuss! You’ve got the potatoes and ham and onions in a perfectly cheesy sauce. It doesn’t get better than this!
I posted this recipe years ago when I first started this blog. I think I shared one tiny photo and then basically just the recipe, with not much explanation about its amazing-ness. It goes to show how far I’ve come in my 8 plus years of blogging.
So I decided it was probably time to update this recipe that’s an oldie but a definite goodie.
I’m a huge crockpot meal fan. Any time I can throw everything in a bowl, plug it in, not think about it, and then simply serve when I’m ready in the evening is a huge win in my book!
I haven’t shared a ton of slow cooker meals on my site and I think that needs to change! I basically couldn’t survive without my crockpot. Distance learning plus slow cooker meals definitely go together like bread and butter!
This is the Crockpot I use and love.
Slow Cooker Cheesy Scalloped Potatoes and Ham
Ingredients
- 8-10 potatoes peeled and sliced thinly (I like to use red or yellow potatoes)
- 8 thick slices of cooked ham I cut each slice into quarters
- 1 yellow onion sliced and separated into rings
- 1 c. water
- 1/2 tsp. cream of tartar
- 2 cans cream of mushroom soup
- Paprika for sprinkling at the end
- 2 heaping cups shredded cheddar cheese
Instructions
- Put water and cream of tartar in a large bowl. Stir. Toss the sliced potatoes in the mixture and fully coat. Drain the water mixture.
- Spray your crockpot with nonstick cooking spray. Layer half of the ham on bottom, then half of potatoes. Salt and pepper the potatoes. Then place half of the sliced onions followed by half of the shredded cheese in the crockpot. Pour one can of soup over the cheese and spread. Repeat the layers and finish by sprinkling generously with paprika. Cook 4-5 hours on high or on low for 7-8 hours until potatoes are tender.
Serve it with a simple green salad or some fruit and call it good! Everyone will be requesting this one time and time again!
I asked my friend the reasoning behind soaking the sliced potatoes in baking soda water and she enlightened me. This process helps with the starch in the potatoes. So there you have it! Simply layer all the ingredients, then let it slow cook to absolute perfection! The cheddar, paprika and mushroom soup come together so incredibly!
